INAF GRACEFULLY INVITES STUDENTS TO THE CULINARY COMPLEX As part of the Student Summit week organized by Université Laval, on October 17 and 19, INAF offered 10 students the chance to take part in free culinary workshops led by three nutritionists, all graduate students at INAF. Participants had the chance not only to prepare delicious dishes, but also to learn more about the nutritional benefits of the ingredients used in the recipes, and ways to save money at the grocery store. In today’s climate of rising grocery prices, it’s important to know how to eat healthily without breaking the bank. Our three experts and student nutritionists, Virginie Drolet-Labelle, Élisabeth Demers-Potvin and Alexa Gaucher-Holm, talked to participants to give them the tools and advice they needed to make healthy food choices on a budget. The participants then got down to work, cooking up two delicious recipes: a creamy lentil soup with coral, and a crunchy chocolate square. Not lucky enough to attend? We’ll give you the recipes below and a few tips on how to do your grocery shopping right. A few tips: Replace meat with plant-based proteins, such as tofu or legumes, a few times a week. Limit food waste, which can hurt your wallet, by : – Planning the quantities of food you buy; – Preserving food (e.g. freezing surplus); – Making the most of food (e.g. vegetable peelings in broth); – Giving a second life to ugly or very ripe foods (e.g. banana bread, apple crisp). When grocery shopping, check the price per 100g or 100ml to compare prices of foods with different weights, give preference to private labels (e.g. Compliment, Selection), take advantage of specials and be aware of marketing techniques, used by companies, that can push us to buy foods we don’t need.
