Dr. Denis Roy has established a research group focused on using genomic methods to study the ecology of microbial communities found in food and the gut microbiota. His objectives are to advance fundamental and applied knowledge of lactic acid bacteria and probiotics, as well as certain metabolic activities of these high-potential bacteria; to develop applications to improve food quality and safety; and to develop new functional foods.
