STELA 2024 Colloquium program unveiled – Essentially diary


Thanks to the strong involvement of STELA members and its exceptional organizing committee, the program for the 2024 edition of the STELA Colloquium, to be held on May 22 and 23, 2024, is unveiled with great excitement.

Three sessions will punctuate these 2 days and will cover the themes of :

  • 🥛 Milk production and processing
  • 🦠 Milk quality and safety
  • 💡 Innovations in dairy processing

Several lectures by our members will be offered, as well as poster sessions and student orals. A CFEQ workshop on digitizing cheese data will be led by Caroline Bédard.

We are honoured to welcome Thomas Croguennec, professor and head of the “Food Science and Industrial Production” teaching unit at Institut Agro Rennes Angers. He will present the results of his work on the mechanistic determinants of the evolution of the viscoelastic properties and structure of enzymatic dairy gels.

Expected innovative highlights:

An innovation luncheon reserved exclusively for researchers and industrialists, to kick-start work on innovative projects. The aim of this event is to focus scientific research on the future needs of milk processing to meet the needs of tomorrow’s consumers. Industrialists and researchers will set out the work to be carried out.

  • A young talent dinner organized to create a privileged link with industry players. In a context where we’re suffering from a shortage of manpower, it’s essential to give our students the opportunity to immerse themselves in current players in the field.
