Expertises
Guillaume Brisson’s research interests focus on food biochemistry, specifically the mechanisms that influence the digestion of food matrices and the release of nutrients. He is also interested in new methods for fractionating food compounds, the creation of new structures, and the study of food compounds that may influence the survival of probiotic lactic acid bacteria, intestinal inflammation, and the gut-brain axis.
