On Tuesday, November 7, 2023, at 11:30 a.m., Maxime Lizotte, chef-patissier of the Wolastoqiyik Wahsipekuk First Nation, will present the lecture “Interprétation actuelle de l’évolution de la cuisine autochtone du Québec” on Zoom. Speaker biography
Chef and pastry chef Maxime Lizotte of the Wolastoqiyik Wahsipekuk First Nation draws inspiration from his research into the culture of Quebec’s First Nations. The evolution of the territory’s occupation and the consequences of colonization shape his current interpretation of native gastronomy. His Wigwam line of products is inspired by Quebec’s land, its wild plants and its history. His cooking series Le Cuisinier locavore (MAtv) informs viewers about local consumption.
