Duckweed is a small aquatic plant with strong agronomic potential (biomass doubling in 48 hours, 15–40% protein), and its extracted and purified proteins exhibit excellent functional properties comparable to commercial protein isolates. However, their digestibility and the bioactive potential of the peptides released after gastrointestinal digestion remain largely understudied.
