The project aims to understand how these businesses influence consumption habits and encourage more sustainable practices, such as reducing food waste, buying local, minimizing packaging, and adopting a more plant-based diet. It also examines the active role of consumers: why do they choose these businesses? How do their values, emotions, and sense of agency shape their decisions?
Through interviews and observations conducted in several alternative grocery stores across Quebec, the research will document the concrete initiatives implemented by both merchants and citizens. In a context where a few large companies largely dominate the food sector, this project will help better understand how local alternatives can contribute to more ecological, democratic, and socially just food systems.
