Dr. Cristina Ratti’s research focuses on gaining a better understanding of process-quality relationships in order to optimize operating costs while integrating the concept of glass transition into the practical application of preservation processes. Her research has yielded promising results in the fields of freeze-drying, osmotic dehydration, and hot-air drying, and in their relationship to the glass transition temperature of foods. She has led her research group in the numerical optimization of simultaneous heat and mass transfer processes using kinetic models. These advances in food process engineering provide a promising starting point for tackling new challenges related to the modeling and simulation of food preservation processes involving heat and mass transfer.
