Dr. Sylvie Turgeon’s research interests focus on the functionality of proteins, polysaccharides, and their mixtures; membrane-based separation of dairy components (proteins, lipids); food rheology; the functional properties of dairy ingredients; and the nutraceutical potential of algae.
