Dr. Stan Kubow’s primary research objective is to promote human health by developing nutritional strategies to protect against the harmful effects of external agents such as medications and environmental pollutants, as well as chronic diseases. His studies have also demonstrated the impact of dietary habits on chronic disease risk and on health risks associated with exposure to pollutants such as methylmercury in different populations, including patients with AIDS, Indigenous Cree and Inuit communities, and overweight and obese children and adolescents. A common theme in his work is the evaluation of how nutrients can help protect against damage caused by pathological processes and environmental toxins.
