The research interests of Paul Angers focus on the stability of frying oils and fats, the extraction, analysis, and quantification of plant-derived bioactive compounds, and the physicochemical properties of lipids, particularly milk fat and marine oils, as well as their fractions for the formulation of food and non-food products.
