Dr. Patrick Couture conducts research in nutrition aimed at elucidating the impact of diet on lipoprotein metabolism, insulin resistance, and cardiometabolic diseases. He is particularly interested in the interactions between nutritional, genetic, and microbiotic factors that may modulate the metabolism of intestinal and hepatic lipids, as well as the associated inflammatory pathways. His team combines randomized clinical trials, lipoprotein kinetics studies, intestinal and liver biopsies, as well as multi-omic approaches (metabolomics, transcriptomics, metataxonomics) to better understand the mechanisms linking diet, the microbiota, and metabolic health. This research, which focuses in particular on the effects of ultra-processed foods and yogurt, aims to characterize the biological mechanisms underlying the effects of food on human metabolism, with the goal of informing nutritional recommendations and more effectively guiding strategies for the prevention of cardiometabolic diseases.
