Couillard Charles

The research interests of Charles Couillard focus on the effects of polyunsaturated fatty acid and/or antioxidant supplementation on cardiovascular risk profiles; the oxidation of plasma lipoproteins; the characterization and understanding of the effects of nutritional interventions on oxidative stress, inflammation, and endothelial function in humans; the physiology underlying lipid accumulation in the vascular wall; the potentially beneficial effects of healthy dietary habits on vascular obstruction; and leptin metabolism, including its role in insulin resistance and the regulation of food intake.
