Summary:
The European project EU-FAIRCHAIN (2020–2024) aims to strengthen the sustainability of the food system by developing innovative mid-tier value chains tailored to small and medium-sized actors. Based on a multi-actor co-creation approach and a multi-perspective evaluation, the project has identified sustainable, circular, and territorially embedded business models that contribute in particular to zero-waste strategies.
This seminar will highlight the French case study, whose objective is to support medium-sized cheese dairies and their partners in valorizing whey, a co-product that has so far been little or not exploited. Two major innovations will be presented: the development of fermented whey-based beverages to increase the value of this co-product, and the design of the SEAMPL software tool, based on simplified life cycle assessments, to optimize regional zero-waste logistics models relying on the reuse of returnable bottles. Development and valorization perspectives will conclude the presentation.
