Pr. Martin Mondor specializes in the application of extraction and separation processes, including membrane technologies (microfiltration, ultrafiltration, reverse osmosis, conventional electrodialysis, and bipolar membrane electrodialysis) and natural deep eutectic solvents for the valorization of agri-food coproducts. He is also interested in the stabilization and protection of bioactive compounds with health-promoting effects, the removal of antinutritional factors, and the improvement of the functionality of plant protein-based ingredients.
