Dr. Roy's research interests focus mainly on:
  • Probiotic bacterial metabolic activity in dairy fermented products;
  • Genotyping of probiotic bacterial strains;
  • Transcriptional analysis of bacterial strain activity;
  • Physiological and genetic study of exopolysaccharide production by slected lactic bacteria;
  • Production study of polysaccharides which is controlled by genetic determinants accessible to the techniques of molecular recombination to determine the functional properties of probiotic;
  • Food microbial ecosystem genomics (metagenomics).
